The Key Stages of Brewing

In our craft microbrewery in Paris, the brewing follows classic steps… but with a lot of attention to detail:

  1. Malt Milling: We choose malts suited to the desired style, then crush them just before brewing.

  2. Mashing: The malts are mixed with hot water to extract fermentable sugars.

  3. Filtration & Sparging: We separate the wort from the spent grains, then rinse to recover maximum aromas.

  4. Boiling & Hopping: This is where the hops come in: bitterness, aromas, and balance.

  5. Fermentation: The yeast transforms sugars into alcohol and $CO_{2}$. Every yeast has its own personality.

  6. Serving: Transfer the beer to a serving vessel, ready to be enjoyed!
